About

When you do not plan to eat, your choices are often fast food or food that we know is not good for us.  How about the ingredients in the food, how good is that?  Have you ever thought how good it is for the local earth?  Well …It’s NOT.

When you do plan to eat, you prepare a meal and customize it to the way you like it.  Do you know the ingredients of the food you’re eating in this scenario?  Yes you do …Well maybe!

Fortunately there are resources like the movie Food Inc or the book Omnivores Dilemma that reveal the truth.  They cover subjects like Genetically Modified Organism (GMO) vegetables that have infiltrated grocery stores nationwide, High Fructose Corn Syrup (HFCS) secretly infused foods, industrial food industry using toxins directly on food and unfortunately more.

As a chef, my most important asset is the quality of foods.  The Yapo knows the best flavors can only come from the freshest, purest (grown in quality soil and without chemical impact) food ingredients.  The bonus of eating the best food ingredients and meals is how healthy it is for you and our local earth.

As a master compost educator, the Yapo diverts food & other natural scraps and lead workshops throughout San Diego, including at the Zoo, business and more to compost & worm bins for future gardens.

If you don’t have a yard for a compost bin & garden, rather than resigning to your large eco-footprint, start a worm bin to reduce household garbage impact by 50% or more.  What will you do with all the “worm” compost?  Spread worm casting & tea to any potted herbs, ornamental plants or around your building’s landscape to begin “benefiting” our local earth.  It’s basic nature (ecosystem) and you can taste, feel the rewards within months!

In the midst of connecting with our local, organic, sustainable farmers, ranchers & fisherman, I started Food Revolution Supper Club to share making tasty great food & making good with our environment with my neighbor, you in our San Diego community.  Each supper is unique to the local food partners, picturesque location and seasonal food ingredients of each 6-course gourmet menu.

Connect with our local San Diego bounty, taste great food, experience rewards of the green lifestyle and sit alongside the farmer or rancher whose food is on the plates.  See first hand and learn how to adopt a Food 360 Kitchen.
